For Kuya... He really likes teletubbies, I don't know why. I really don't find them cute and adorable.hihi

And for me... An addition to my DVD collection, hehe.

It's been a while...

that I have not visited this blog. I've been hooked on facebook that's why.. I've been addicted on one of it's application, farm town. It's so addicting talaga, it's like building your own farm. You plant your own crops and then hire someone to harvest it. You can buy house, flowers and create your own farm design through the coins you are earning from the crops. My malaysia buddies are all hooked to it. So to those who doesn't have a facebook account yet, sign-up now and become my farm town neighbor. ;)

Undecided

It's 3 months before Kai and Mandie's birthday but still we haven't decided the theme yet. Days runs so fast and you see wala pa ako nasisimulan. I'm still looking for party organizers but I don't know if that would be practical due to recessions, etc. Hay, magagalit naman ang financier nito eh dahil sa expenses.. Anyways, back to the theme, I'm thinking of Under the Sea/Nemo Party or Sesame Street, u think it's bagay sa kanila? Any suggestions of better party themes? :)

after 3 months...

of Visa processing in the Philippines we're back again here in Malaysia. We really enjoyed our 3 months stay in PI, we went to the beach with the Hamors (a family friend), got to put up our own biz, watched my favorite Side A band in concert, etc. And now nand2 na naman kami sa Ipoh, haaayy, I missed PI. I'm pretty sure Kai missed his playmates too. Anyways, I have so much to do so for now I'll just leave you with my kids latest photo.

Chicken and Pork Adobo...

is one of our favorite Filipino dish. There are probably hundreds of variations on how you cook adobo. Some like it with coconut milk, some prefers cooking it without soysauce, etc. Each home really has their own blend. Anyways, here is my version for you to try.

Ingredients:
1/2 kilo chicken
1/2 kilo liempo
4-5 pcs laurel leaves
3 tbsp. oil
1/2 cup soy sauce
1/2 cup vinegar
whole black peppers
1 tbsp sugar
8 cloves garlic
1 onion
2 cups water
powdered seasoning

Procedure:
Saute garlic and onions. Add pork and chicken until color turns to white and there are no more blood. Pour soy sauce, water, vinegar, laurel leaves, sugar, pepper and the seasoning. Bring this to a boil and simmer until tender. Turn off the flame. Drain the meat and fry. Bring back the fried meat in sauce. Reheat and simmer until sauce becomes thick. Serve with steamy rice. YUM!

Vanilla Cupcakes

This cupcake recipe is very simple, perfect for starters. I wanted it plain, no toppings because my son is a bit overweight. I'm afraid he might get big more because of too much sugar consumption.hehe

Ingredients:
3 eggs
1 cup butter, softened (equivalent to 1 bar of butter)
1 cup caster sugar
1/2 cup buttermilk (I can't find buttermilk here so I substituted it w/ 1/2 cup evap milk mix w/ 3 teaspoons of lemon juice)
1 1/2 cups self raising flour, sifted
1 teaspoon vanilla extract
*TIP* You can make your own self raising flour. For every 1 cup of all purpose flour, mix it w/ 1 1/2 tsp baking powder and 1/2 tsp salt.

Procedure:
1. Preheat the oven to 160C (320F). Line a 12 cupcake pan with cupcake papers. In a medium sized bowl, using a wooden spoon, lightly beat the eggs, add the butter and sugar, then mix until light and fluffy.
2. Add buttermilk, flour and vanilla, and stir to combine. Beat with an electric mixer for 2 minutes until light and creamy.
3. Divide the mixture evenly between the cupcake papers. Bake for 18-20 mins until risen and firm to touch. Allow to cool for a few minutes and then transfer to a wire rack.

The chubby kuya munching on cupcakes. :)

Torn.

Between these beauties! Can't decide yet which to buy. :) Please help!

Paksiw na Pata w/ Pineapple

I learned this recipe from my nanay. I barely cook pork because hubby prefers beef more. But kanina when I told him I will cook paksiw for lunch, he said, he couldn't wait for lunch already. :) Nagiging lasang beef daw ang pork pag ako ang nagluto.hahaha. That's one good thing I really love about chrisbabe, he really believes in my cooking talent.hehe Anyways, here's the recipe for you to try.

Ingredients:
1 kilo pork pata
5 cloves garlic
3-4 pcs laurel leaves
1/4 cup soy sauce
1/4 cup vinegar (can adjust if you like a sour-y taste)
3 tbps. sugar
5 pcs pineapple rings
1/4 cup pineapple juice (can use the juice from canned pineapple rings)
1 tsp. salt
black peppercorns
3-4 cups chicken stock (can use concentrated chicken stock mixed w/ 3 cups water)

Procedure:
Put pork in a pot filled with enough water and bring this to a boil. Then threw out the water and rinse the pot and pork so you can make a clearer stock. Then bring this to a boil again, now using the chicken stock. Then add the garlic, laurel leaves, soy sauce, vinegar, sugar, salt and pepper. Simmer using very low fire and wait until it becomes tender, breaking-apart bits. Lastly, add the pineapple juice and pineapple rings. Simmer for another 5 minutes then serve. Best serve with white rice. :)
